On this page and from time to time our chef's going to share with you one of his little secrets.

Goat Cheese Mousse with Tomato jam and Crispy Almonds


* Mousse:

- 1/2 litre of whipping cream
- 80 gr sugar
- 200 gr cream cheese
- 30 gr goat cheese

* Tomato Jam:

- 200 gr tomatoes
- 1 dl water
- 100 gr sugar

* Almond crisps:

- 80 gr butter
- 1 dl orange juice
- 30 gr sugar
- 100 gr almonds
- 2 egg whites


Cheese mousse: Put all ingredients in the Thermomix and centrifuge them for 60 minutes until getting a mousse.

Tomato jam: Boil tomatoes in the water. Add sugar and leave boiling until getting a thick jam.
Almond crisps: Blend all ingredients. Put dough in a sil-pac and bake it for 5 minutes in the oven at 180ºC until almonds get golden brown.

Decorate with a mint leaf.
